Basic Spaghetti Squash

Spaghetti squash used to scare the crap out of me.  It always seemed so complicated.  The first time I bought a spaghetti squash I was so scared of it, it sat on my counter until it rotted.  True story.

Now I wonder what the hell I was scared of.  It takes 5 minutes to prep.  Seriously 5 minutes!!!

Because it can take 45-60 minutes to bake, I usually make this on my meal prep days, then use it later in the week.

P.S.  We compost.  If you compost make sure you cut up the rind into smaller pieces because it will breakdown quicker.

Spaghetti squash is so easy to make.  The hardest part is cutting it in half.

Ingredients
  • 2 T Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp paprika or garlic powder (optional)
Instructions
  1. Preheat oven to 375 degrees

  2. Cut spaghetti squash lengthwise.

    Scoop out the seeds.

  3. Rub olive oil on both cut sides.

  4. Sprinkle with salt and pepper.

  5. Sprinkle with paprika or garlic powder, if desired.

  6. Place in baking dish, cut side down.

  7. Bake 45-60 minutes.

  8. Let cool about 10 minutes.  Use fork to gently scrape out insides.

    Serve immediately or store for later use.
