    Slow Cooker Chicken Thighs (Whole30)

      To be honest, I usually don’t have the energy to come up with a new meal everyday.  Some days are so hectic, if I don’t have leftovers in the fridge, then I’ll turn to something fast which usually means junky.  This means having healthy leftovers in the fridge vital.     My Whole30 Experience & Results

    March 31 was my official last day of Whole30!  I wanted to get my thoughts down before too much time passed. First off, I would like to say that I LOVED Whole 30!   Hands down this is the best thing I have ever done for myself.  Physically I feel fantastic!  Mentally I feel clearheaded and empowered.  Emotionally, well I’m still figuring out the emotional side of everything I’ve learned.     Rosemary Roast Beef

    Being on Whole30 has forced me to spend more time in the kitchen.  I have been cooking a lot more.  As a result I have become more confident in the kitchen and experimenting with new recipes.  For most cooking a roast is basic but I’ve only done a slow cooker pot roast. Today I decided to try an oven roast with a spice rub.  I used a 3.5 lbs top round roast from Robinson Hill Beef for this recipe.     Meatballs

    Most meatball recipes call for 1 lbs of ground meat.  I think that is cute.  When I make meat balls, I will make the shit out of those. They are labor intensive.  If I’m going to spend that much time making something, it better last a long time.  I will freeze them almost immediately and just take out what we plan to eat.  In our house 4 lbs of meatballs will last about a month, maybe longer if we forget we have some.  Sometimes it is the only thing the toddler will eat.     Shedding the Baby Weight

    WHEW!  Now that I am done being pregnant, I’ve turned my sights shedding the baby weight and getting back into running shape! Even though I did exercise the majority of my last pregnancy, I was not able to maintain my previous fitness level. Setting a Goal Back in 2010, participated in my first Ragnar Relay run. It was a 200 mile-ish run from Cumberland, MD to Washington, D.C..  It was crazy, challenging, and more fun than I could have ever imagined!     Body After Baby: Week 1
